The Summer for Kid's Yoga

We have been have some fun around here with Kid's Yoga! I will mostly let the pictures speak for themselves! We have been to the beach, deep into the jungle and to Hogwart's Castle all via yoga and our grand imaginations! We have layed in savasanah and reached up to pull a star down on to our bellies. We have watched the waves on the beach wash up shells onto our bellies and we have giggled and laughed as we formed a human train to take us to Hogwart's and back again. I knew the kids would love it.....I had no idea how much I would love it! Namaste to all my cute little yogis, you are the best, thanks for the GRAND AdVeNtUrE!

Nicoise Salad....such a great summer meal!

Cute Nephew Brandon was here to sample!

Do you want to try a fun summer dish? I took a cooking class a few weeks ago from Marguerite Henderson & my good friend Tonya Lemone. The class was held in Tonya's beautiful yard and we learned about herbs and how to grow an herb garden. We made herb flavored vinegars and a tussie mussie and potted a plant start. Then we were served a beautiful lunch by Marguerite. It was a yummy Niciose Salad with Salmon and quiche and croissiants and fruit. Yummy lemon herb cookies for dessert. We had such a good time togther!

The other day I attempted to make my version of Nicoise Salad for dinner. It turned out pretty good so if you want to try it, here's my recipe.

Salmon Nicoise Salad

Green beans, (cooked and cooled)
New Potatoes (cooked and cooled)
Sliced red onion
Hard boiled eggs (optional)
Mixed lettuce greeens
Salmon, grilled cut into serving pieces

Honey Mustard Dressing
2 T. Honey
2 T. Rice Wine Vinegar
1 T. Dijon Mustard
1/3 cup Olive Oil

Mix with wisk until it has a creamy look.

I dressed the salad greens with some of the dressing, then put on a serving platter. Next I dressed the beans, potatoes & onions each seperately with the dressing and arranged around the greens. Arrange peeled and sliced hard boiled eggs, if using. Grill the salmon and place it on top.
Enjoy!

A Surprise Party for Mike....50 years and still kicking!

We headed over to Denver to catch up with sister Jana and her so cute, we love him so much, can't get enough of him, husband, Mr Mike Trenck. This was to be a big surprise for his 50th birthday. Too bad Jana let the cat out of the bag......I don't think he was surprised....by us coming or by the surprise party. Oh well, it was still much fun and we really enjoyed being together for a very short but fun filled weekend. Jeanette and Randy came too and we had some fun partying on Saturday...just ask Randy....I know he had a blast and then they left for home on Sunday and Brad & me, Jana and Mike and Kealohi spent a great day together. We headed to Boulder Colorado and hunted down some of the houses where my dad was raised and we stopped at a grave yard to find the graves of great grandparents. No luck however, we'll have to try it again when the office is open so we can locate the graves. Then on to Estes Park and we went to explore the old Stanley Hotel...it's haunted don'tcha know! It really was a beautiful old hotel. We had some fun shopping and eating.....mostly eating.....the food was great! So fun! We had a great trip! Next stop....HOME!

HaPpY FoUrTh of JuLy.....we packed it full of fun!

Jeanette's Belly Dancing Troupe Performed at the Freedom Festival

Happy Independence Day! Ours started out....well, it started out very early with a trip down to Provo to see the Balloon Fest! We had a grand time watching all the many colored balloons fill the air....this was all Amanda's idea, cause we usually steer clear of Provo on the 4th of July, but what the heck? We picked up doughnuts at our favorite spot in PG, Daylight Doughnuts and headed home for a nutritious breakfast before attempting a little day hike in Alpine.
The was my idea and it proved to be just a little bit more of a workout then intended. We did get treated to a beautiful waterfall at the end so definitely worth it.
Next came a fun filled day with all of the cousins coming to my house and breaking out the slip and slide and lounging in the hot tub and whatever else seemed fun at the time. I was busy making blackberry pie and other yummy things for a great barbecue later in the day.
The food was great and the company even better.....but wait we are not done yet! Down we go to the PG JR High to enjoy the extra sparkley treat of the PG City Fireworks! They did not dissapoint this year....we had so much fun before and after the show with our own glow in the dark sticks and sharing popcorn and snacks. Good job on reserving the spot goes out to Bradley! Nice job Honey!
Even more fun to come as we came home and enjoyed our delicious desserts and then out to the curb to set off our own pyro show. It was fantastic. What a day....we could hardly drag ourselves to bed.....can't wait for next year!
