Raw Alfredo Sauce....this is AMazING

I went to a raw foods potluck dinner at Sarah Katoa's tonight!  So fun and I got to meet some really fun and amazing people.  I hadn't a clue what to bring to share but it just so happened that I had some zucchini and marinaded mushrooms in my fridge along with some fresh basil and so I decided on a raw pasta dish.  I have made this dish before and thought it was amazingly delicious.  However, I was not prepared for the lovely compliments that just kept coming at the party!  They LOVED it!  I know that you will too!  Whether you are all raw, vegetarian or just dabbling between the two, this is a great sauce to have in your back pocket.  It mixes up in under 10 minutes flat and it will keep in the fridge for about a week, maybe a smidge longer.  Try it soon and ENjoy!  Credits for this lovely sauce go to the energetic and lovely Mimi Kirk @ Young on Raw Food

Cheezy Cheese Sauce

2 cups raw cashews
4-5 tablespoons lemon juice
1/1/2 cups water
1/8 cup olive oil
2-3 tsp. fresh rosemary, minced
3-4 tsp. Braggs Liquid Aminos or gluten free tamari
3-4 tbsp. nutritional yeast
1-2 tsp. Celtic Sea Salt or to taste
Ground black pepper to taste

Blend into thick cream. Add more water if needed.
Taste for all seasonings and add more to your liking.
Garlic can also be added along with ribbon cut basil.

Use your spiralizer to create zucchini noodles, I also like to add carrots.  Another great addition is marinaded mushrooms, chopped tomato, fresh creative!  (If you don't have a spiralizer, just grate your zucchini or chop in thin strips.)
