Two Bean Salsa
I have a new gluten free FAVORITE! Lundberg's new Rice Chips. They come in lots of amazing flavors and they are oh so tasty on their own but pair them with this amazing salsa recipe and you have a yummy gluten free meal! I admit they are a treat because I think they are deep fried. I haven't actually looked cause I don't really want to know. LOL!
I tweaked one of my favorite Salsa recipes here, using the Simply Organic Italian seasoning mix instead of Good Seasons to make it officially gluten free. I usually use Good Seasons but wasn't sure if it was gluten free so tried this new mix and it was delicious. So try this fresh and easy recipe for a summer lunch or quick and healthy snack. Celery and lettuce would be great dipper for this too. Heck you could just serve it over salad greens for a yummy salad.
TWO BEAN SALSA

COMBINE ALL INGREDIENTS AND SERVE WITH CHIPS AND VEGETABLES. WILL KEEP COVERED IN FRIDGE ABOUT 2-4 DAYS.
